Pannacotta with squash and pecorino Liege way

Ultimate festive and ketogenic recipe for the 2022 edition of the Collaborative Advent Calendar, a recipe I made last night and that delighted my guests: salted pannacotta verrines, squash and pecorino, topped with a whipped cream with nutmeg.

Equipment

  • 1 siphon It is also possible to mount the whipped cream to the electric mixer.

Ingredients

For the pannacotta

  • 80 cl cream florets
  • 600 nutmeg squash
  • 4 sheets of gelatin
  • 80 g pecorino graté or parmesan cheese
  • 1 handful of hazelnut kernels or sliced almonds
  • salt and pepper

For whipped cream

  • 40 cl cream florets
  • 1/2 tsp ground nutmeg
  • salt

Instructions

  • Cook the squash cut into large pieces, ideally steamed so that it does not become water-filled. Check the cooking by pricking with a fork, it takes about 30 minutes.
  • Shake the gelatin sheets in a bowl with cold water.
  • Once the squash is cooked, peel and drain by crushing it in a colander.
  • In a thick-bottomed saucepan, bring the cream to a boil, lower the heat, add the cheese and squash and move to the blender (or blender).
  • Add the gelatin thoroughly drain, stir until well dissolved, season with salt and pepper.
  • Pour into the verrines and refrigerate for at least 12 hours.
  • For the whipped cream, gently heat the crème fleurette, season with salt and add the nutmeg. Let infuse over very low heat for a few minutes, then let cool.
  • Pour into the siphon, pressurize and keep cool.
  • Crush a handful of hazelnuts, and roast them for 10 minutes dry in a hot pan.
  • A few minutes before serving, decorate with whipped cream and hazelnuts.

Notes

I made 12 large verrines of 7cm in diameter, but it was a little too copious as part of my buffet dinner. By filling only a third rather than a half, I would have filled 18 glasses, 24 if they were small 4-centimetre verrines.
